In the Moscow region of Kolomna, in one of the most famous places of this ancient Russian city, next to the Pyatnitskaya Tower of the Kolomna Kremlin, is the "Kalach" museum, which revives the ancient craft of baking kalaches. Here, kalaches are sold to tourists and locals for takeaway.

The "Kalach" museum is unique. It can be called alive, as the central element of the exhibition is the recreated process of baking kalaches based on ancient recipes. It includes all stages: from preparing the hop sourdough and mixing the flour to shaping and cutting the dough on an ice table, as well as baking and tasting kalaches according to special rules, starting with the "crispy lip" and ending with the warm "tender belly."

The production of kalaches takes place within the walls of a carefully restored mid-19th century building, where a reconstructed two-chamber oven based on old blueprints is located. It is fueled with birch firewood without bark, which gives the kalaches a special whiteness. In the "Kalach" museum, there is a master baker who accompanies the baking process with stories. His historical prototype was a Kolomna townsman, M. N. Milyaev.

The "Kalach" museum collects a collection of ancient breads: the "Spoiled Child" papushnik, the rye boiled "Pyatnitsky kalach" on sourdough with barley malt and Pomor salt, sweet and rich pretzel with streusel, and mustard bagel.
